Riesling Half-Dry

Bellarmine Riesling Half-Dry is sourced from one of the very few vineyards in Pemberton to grow Riesling, planted by hand in 2000.
Prior to harvest the grapes are regularly tasted to determine when the optimum flavours are achieved. They are then picked in the cool of night.
The wine is made with free run juice taken from the initial fruit crush, as well as light pressings from the skins. The pressings provide greater depth of flavour, which is well suited to this off-dry style.
Like other Bellarmine Rieslings it is fermented at cool temperatures in a stainless steel tank, avoiding oak to optimize the natural characteristics of the variety.
The wine is abruptly chilled to stop fermentation while there is still a small amount of residual sugar. This results in some sweetness in the final wine.
Pale straw, Bellarmine Riesling Half-Dry is aromatic and slightly sweet with citrus and floral notes. Natural mineral acidity provides length. Cellaring potential is eight years.
