Reserve Cabernet Sauvignon

Ashbrook Estate Reserve Cabernet Sauvignon is sourced from the estate's 'Old Cab' Houghton clone plantings. Established in 1976, they are some of the oldest vines in Wilyabrup, Margaret River.

This wine is mostly Cabernet Sauvignon with small parcels of Merlot, Cabernet Franc and Petit Verdot. All the grapes are handpicked in the cool of the morning.

The fruit is destemmed and cold soaked. It ferments in open, temperature controlled tanks, receiving gentle plunging multiple times a day. The wine is then sent to new and seasoned French oak barrels to mature for 24 months.

Barrels that exhibit the distinct characters of Wilyabrup Cabernet are chosen for the final blend. The wine is bottle aged in an underground cellar for two years before release.

Deep red, Ashbrook Estate Reserve Cabernet Sauvignon has dark fruit and spicy oak flavours. Smooth, fine grained tannins reinforce its long finish. Cellaring potential is 15 years.
