Ashbrook Estate Chardonnay is sourced from mature vines, including 1976 plantings that are among the oldest in Margaret River. These estate vines are hand harvested at dawn.
The grapes are destemmed and pressed, then the juice is settled in temperature controlled stainless steel tanks. Around half is fermented in new French oak barrels while the remainder ferments in tank.
Both parcels mature on lees for eight months. Malolactic fermentation and lees stirring are avoided to retain the primary fruit flavours crucial to the wine's style. After bottling, the wine is aged a further 12 months before release.
Straw yellow, Ashbrook Estate Chardonnay is a sculptured mix of stone fruit and citrus flavours with a backbone of oak complexity. Cellaring potential is five years.
