Wine
All Saints Estate Durif is handpicked from estate vines. This unusual variety is a cross of Peloursin and Shiraz that prospers almost exclusively in north-east Victoria.
Fermentation is in open fermenters with hand plunging three times daily. The wine is hand pressed with the pressings added back to the main wine for extra body. Maturation occurs in seasoned French oak puncheons for 18 months.
Dense dark red, All Saints Estate Durif is full bodied with typical Durif traits of ripe berry flavour, a tannic backbone and a long finish. Cellaring potential is 10 years.
