Wine
Seville Estate Riesling is handpicked from a block of Riesling grafted onto 35 year old Chardonnay rootstock in the mid 2000s.
The fruit is whole bunch pressed and racked to seasoned oak barrels for wild yeast fermentation. The older oak provides a neutral barrel ferment character without introducing new oak flavours or tannins.
The wine is aged on lees for 10 months before being racked, clarified and bottled.
Pale straw yellow, Seville Estate Riesling has a fine balance of pure fruit taste, acidity and lees characters. Cellaring potential is 10 years.
