Wine
Levantine Hill Syrah is a blend of multiple small batches of fruit from a single block of mature PT23 clone Shiraz, grown on the estate's Maroondah Highway vineyard.
The grapes are handpicked over several days, hand sorted, then destemmed or crushed to small open vats. Stalks are judiciously added back to some parcels for extra aroma and complexity. One small vat is left as whole bunches.
Fermentation occurs with a mix of natural and inoculated yeasts. The ferments spend 1-3 weeks on skins, hand plunged or turned over once per day at most to gently extract and integrate tannins.
The wine then matures in French oak puncheons and hogsheads, typically one third new. After 18 months, the components are blended and prepared for bottling.
Crimson red, Levantine Hill Syrah is medium bodied, silky smooth and subtly perfumed, with a resounding finish. Cellaring potential is 15 years.
