Katherine's Paddock Chardonnay

Levantine Hill Katherine’s Paddock Chardonnay is an ode to Grand Cru Montrachet of Burgundy in France, famous for Chardonnay. It is made only in limited quantities.
The wine blends P58 and Bernard 95 Chardonnay from two distinct, east facing blocks on the estate's Hill Road vineyard in the Yarra Valley. The vines are perfectly located to capture both cool breezes from the Great Dividing Range and the morning sun.
The fruit is whole bunch pressed to tank and its juice settles naturally overnight. The cloudy juice is racked to premium French oak barrels with light solids, where a mix of natural and cultured yeasts are used for fermentation.
The wine matures on lees for over 10 months, with select barrels allowed to complete malolactic fermentation. After bottling, it develops in the cellar for three years prior to release.
Bright yellow, Levantine Hill Katherine’s Paddock Chardonnay balances a subtle acid line with ample varietal character and creamy texture. Cellaring potential is 15 years.
