Applejack Vineyard Pinot Noir
Wine
Giant Steps Applejack Vineyard Pinot Noir is sourced from the 1997 planted Applejack Vineyard at Gladysdale in the Upper Yarra Valley. It is a blend of MV6, Abel and Pommard clone Pinot Noir.
Each clone component is vinified separately. Some parcels are left as whole bunches while others are destemmed. Following cold soaking, the batches are gently warmed to undergo indigenous yeast fermentation.
Once dry, each component is pressed to tight grained French oak barrels to mature for 8-10 months. The wine is then racked, blended and bottled by gravity with no fining or filtration.
Pale ruby, Giant Steps Applejack Vineyard Pinot Noir is light bodied with red fruit flavours, a savoury edge, delicate tannins and a tight finish. Cellaring potential is eight years.
