Gembrook Hill Blanc de Blancs is made with Chardonnay fruit from one of the oldest vineyards in the Upper Yarra Valley. The cool climate site has a north-easterly aspect and red loam soils.
This wine is typically produced only in the years that Gembrook Hill does not produce a Chardonnay table wine.
It is made in the traditional méthode Champenoise, a highly specialized process. The base wine is bottled, inoculated for a secondary fermentation and sealed, producing natural effervescence. The wine is then aged on its yeast lees in the bottle.
After at least four years, the wine is disgorged – the lees are removed. In certain vintages, a small addition of sugar (dosage) is made to the final wine.
Pale straw with a fine bead, Gembrook Hill Blanc de Blanc is flinty and dry with crisp acidity and creamy, nutty, leesy complexity. A perfect aperitif. Drink now.
