Serrat Shiraz Viognier is typically 95% Shiraz from the estate's 2003 plantings and 5% Viognier from the winery's original 2001 plantings.
The Shiraz is a blend of two clones: Best's Old Block clone from the 1868 plantings at Best's Great Western and Clone 1654, a Barossa selection. The Viognier is grown from cuttings taken from Yarra Yering.
Handpicked and predominantly destemmed, the varieties are co-fermented with wild yeasts in small open fermenters. The wine is then gently pressed to 25% new French oak puncheons to age for 11 months.
Crimson purple, Serrat Shiraz Viognier is exuberant but restrained. Finely structured and fragrant, it has savoury yet silky tannins and an aftertaste that lasts forever.
Outstanding. Cellaring potential is 20 years.
