Seville Estate Shiraz is made from handpicked, estate grown grapes that have undergone bunch selection in the vineyard.

Destemmed grapes are tipped into open fermenters with a small whole bunch inclusion. After several days of cold soaking, the juice begins natural fermentation with daily hand plunging.

The wine is pressed off skins, prepared for malolactic fermentation and run directly to one third new French oak barrels to mature for 12 months. It is then racked and bottled without fining or filtration.

Bright brick red, Seville Estate Shiraz balances riper berry flavours with a savoury thread, velvety tannins and a long finish. Cellaring potential is seven years.
