Wine
Mount Mary Quintet is the result of the pioneering efforts of Dr John Middleton in the 1970s to make a new genre of Australian Cabernet inspired by the wines of Bordeaux.
It is typically a blend of 50% Cabernet Sauvignon, 25% Merlot and 15% Cabernet Franc with smaller amounts of Malbec and Petit Verdot.
Each vintage the blend varies with seasonal factors such as fruitfulness and fruit set. Deciding when to pick each variety determines not only the flavours but also the quality of the tannins, acid and alcohol levels.
After up to 12 days of fermentation the wine is aged for 22 months, including one third in new oak barriques and one quarter in large format oak.
Deep crimson, Mount Mary Quintet is a wine of pristine fruit, fine grained tannins, silky texture and empathetic oak maturation.
A Bordeaux style wine of poise and elegance. Cellaring potential is 15 years.
