Seville Estate Pinot Noir is grown in the cooler southern part of the Yarra Valley. The grapes are handpicked exclusively from estate vines.
The fruit is destemmed into open tanks, with some whole bunches added. After cold soaking, fermentation begins naturally. It is hand plunged daily. Malolactic fermentation occurs during primary fermentation.
The wine is pressed off skins and run straight to one third new French oak barrels to age on lees. It is not filtered or fined, but instead allowed to clarify naturally in the cellar prior to bottling.
Crimson purple, Seville Estate Pinot Noir is a vibrant, complex style of Pinot Noir with soft tannins delivering structure and length. Cellaring potential is seven years.
