Mount Mary Pinot Noir draws from vines sourced from western Victoria in 1971, before individual clonal selections were the norm. As a result, the older Pinot blocks are a mix of many clones.
Over time, Mount Mary's clonal selection has been refined. As of 2008, newer Pinot blocks have been planted on American rootstocks to specific clones, namely MV6 and 777.
The wine undergoes a relatively short fermentation of typically 8-10 days, with no cold soaks or post ferment maceration. This is followed by 16 months of barrel ageing in 25% new oak barriques.
In the winery the emphasis is on minimal intervention. Little, if any, filtration is carried out prior to bottling.
Deep crimson, Mount Mary Pinot Noir is poised between sweet and savoury, with red fruit flavours and firm tannins. Cellaring potential is 12 years.
