Old Vine Reserve Shiraz

Seville Estate Old Vine Reserve Shiraz is made purely from the estate's original 1972 plantings, a tiny, one acre block that produces low yields of small berries and bunches.
The fruit undergoes bunch selection in the vineyard. It is placed into an open fermenter for cold soaking, 25% as whole bunches and the remainder destemmed.
Fermentation begins naturally and lasts around a week with daily hand plunging. Once pressed, the wine is inoculated for malolactic fermentation and run directly to new and seasoned French oak.
After 12 months of maturation, the wine is racked and bottled without fining or filtration.
Dark crimson purple, Seville Estate Old Vine Reserve Shiraz is elegant with layered textures that dance across the palate – sweet fruit, velvety tannins and lively acidity.
A refined cool climate Shiraz. Cellaring potential is 15 years.
