Cabernet Sauvignon
Wine
Bloodwood Cabernet Sauvignon is sourced from Bloodwood's House Block near their cellar door and their Maurice Vineyard, both in Orange, New South Wales.
The fruit is cold soaked and fermented with a high proportion of whole berries. The juice is regularly splashed over the top of the grape skins, aerating the ferment to shape the tannins in the wine.
For maturation the wine spends 30 months in predominantly seasoned French oak hogsheads, then is transferred to stainless steel to mature further. The wine is filtered prior to bottling.
Dark plum purple, Bloodwood Cabernet Sauvignon has cedary dark fruit flavours with fine grained oak tannins. Cellaring potential is 10 years.
