Longview Macclesfield Cabernet Sauvignon is from cool climate Macclesfield in the Adelaide Hills. Careful vineyard management ensures the right balance of sun and shade on the fruit.
The fruit is hand harvested, chilled overnight and delivered to the winery. It is then crushed and destemmed.
The wine is open fermented with daily pump overs. After up to 10 days on skins post ferment, it is pressed, settled and racked to French oak puncheons for malolactic fermentation and maturation.
Deep purple, Longview Macclesfield Cabernet Sauvignon has brooding dark berry flavours and velvety, sinewy tannins. Cellaring potential is 10 years.
