Grey Label Chardonnay
Wine
Wolf Blass Grey Label Chardonnay is sourced from selected vineyards in the cooler, higher altitude areas of the Adelaide Hills, around Piccadilly Valley and Lenswood.
These areas are ideal for Chardonnay. Occasional fog and cloud cover, together with bursts of gentle sunshine, slowly ripen the fruit and ensure full flavour development.
The fruit is chilled in a cold room for 24 hours prior to whole bunch pressing. A portion of juice from late in the press cycle is included to build texture in the final wine. Fermentation takes place in French oak, 50% new.
Post ferment, the wine is left on full yeast lees for spontaneous malolactic fermentation. It then matures for eight months with stirring every 2-3 weeks to develop complexity.
Straw green, Wolf Blass Grey Label Chardonnay has bright fruit flavours with subtle texture, integrated oak and fine, flinty acidity. Cellaring potential is five years.
