Chook Block Shiraz

Wirra Wirra Chook Block Shiraz draws from the biodynamically farmed Chook Block Vineyard, planted in 1960 next to one of founder Greg Trott's original broiler chicken sheds.
In certain vintages, the site produces tiny parcels of exceptionally intense fruit. The fruit from these years is vinified separately to produce Chook Block Shiraz.
The fruit is briefly cold soaked before fermentation. Tastings twice a day during the ferment determine the level of hand plunging and maceration on skins. At the correct balance of fruit and tannin extraction, the wine is basket pressed.
It is sent to individually chosen French oak barrels. After malolactic fermentation the wine is racked and returned to barrel, then again every four months as it matures.
Bright ruby red, Wirra Wirra Chook Block Shiraz has rich fruit flavours with earthy, savoury complexity and grainy tannins. Cellaring potential is 15 years.
