Higher Earth Syrah

St Hallett Higher Earth Syrah is made with select parcels of Syrah (Shiraz) sourced from a range of growers in the higher altitude, cooler climate Eden Valley region.
Each fruit parcel is treated separately in the winery, some with a small whole bunch inclusion and others undergoing wild yeast fermentation. All ferments are conducted at 26°C and left on skins for up to 14 days.
Maturation is in a mix of French oak puncheons and hogsheads, around a quarter new. Each parcel matures for 14-16 months depending on its individual requirements.
Deep garnet, St Hallett Higher Earth Syrah is bold and tightly wound with dark fruit flavours, grippy tannins and persistent length. Cellaring potential is 10 years.
