Bird in Hand Syrah is a contemporary take on Shiraz, with grapes sourced from sustainably managed estate vineyards in the Adelaide Hills.
The best fruit is handpicked as whole bunches, the remainder harvested and destemmed in the field. The bunches are placed at the bottom of a small open fermenter, the destemmed berries tipped over the top.
During a long, cool ferment, there are minimal pump overs and only gentle plunging. The wine spends 18 months maturing in new and seasoned French barrels.
Vivid purple, Bird in Hand Syrah has juicy fruit flavours, silky tannins and bright acidity. Cellaring potential is 10 years.
