The Classic Chardonnay

Billy Button The Classic Chardonnay is sourced from several cool Alpine Valley sites, including the Antonello, Greenacres and Nicholson Vineyards. Each is handpicked.

Whole bunch pressed juice is filled to barrel with full solids. A mix of selected yeasts and wild yeasts from the vineyards are used for fermentation.

The parcels are then aged on lees for nine months in French oak with minimal stirring. Partial malolactic fermentation is permitted. Careful barrel selection determines the final blend.

Pale yellow, Billy Button The Classic Chardonnay has stone fruit flavours with oak spice, creamy texture and cool climate acidity. Cellaring potential is five years.
