The Beloved Shiraz

Billy Button The Beloved Shiraz is one of the few Billy Button wines made with a traditional grape variety. The fruit is sourced from growers in the Alpine Valleys.
Winemaker Jo Marsh has always had an affinity for Shiraz. While working at Seppelt, she was the custodian of their iconic St. Peter's Shiraz, which cemented her love for the variety.
The fruit is destemmed into open fermenters. After several days of cold maceration, wild yeast fermentation begins. The cap of grape skins is gently plunged twice a day.
Post ferment, the wine is pressed to new and seasoned large format French oak for maturation. It is blended and filtered prior to bottling.
Bright purple, Billy Button The Beloved Shiraz is full of dark fruit flavours with subtle oak and a long, juicy finish. Cellaring potential is 10 years.
