Dimchurch Shiraz

Chris Ringland Dimchurch Shiraz is a collaboration between Chris Ringland and fifth generation vigneron Adrian Hoffman. Hoffman selects parcels of old vine Shiraz from sites at Ebenezer in the northern Barossa.
The grapes are gently destemmed then vinified in small individual batches. After 24 months in oak, the wine undergoes its first preliminary barrel tasting. This is then repeated every six months until the blend is finalized.
Typically the wine spends 3-4 years in barrel, and sometimes up to six years.
Opaque red, Chris Ringland Dimchurch Shiraz has dense dark fruit flavours, opulent ripe tannins and persistent length. Cellaring potential is 25 years. Decant for 6-8 hours before drinking.
