Tribute Series Shiraz

Coombe Farm Tribute Series Shiraz is a cool climate Yarra Valley Shiraz from the winery's north facing F Block, home to Bests Old Block and Tahbilk Shiraz clones.

The fruit is cooled overnight, then placed in open top fermenters as a mix of whole bunches and destemmed grapes. The cool fruit ensures fermentation begins slowly.

During the ferment, the juice is hand plunged and gently handled. At sugar dryness it is pressed and aged predominantly in seasoned puncheons. The wine is then blended and aged further prior to bottling.

Deep red purple, Coombe Farm Tribute Series Shiraz is a dark fruited, brooding wine with fine velvety tannins and a long, rich finish. Cellaring potential is 10 years.
