EVOI Margaret River Chardonnay is where it all started for EVOI with just two barrels made in the inaugural 2007 vintage. It draws from Wilyabrup in the heart of Margaret River.

After wild yeast fermentation, the wine matures on high solids in a mix of French oak barrels and tanks. It sees twice weekly lees stirring (bâtonnage) and partial malolactic fermentation.

Bright straw, EVOI Margaret River Chardonnay has stone fruit flavours, savoury lees complexity and a creamy oak finish. Cellaring potential is five years.
