Old Vine Shiraz
Wine
Head Wines Old Vine Shiraz is made with small parcels of fruit from Barossa and Eden Valley vineyards, some around 100 years old.
The fruit is open fermented with indigenous yeasts and a small proportion of whole bunches. Over the two week ferment, the juice is hand plunged and pumped over twice daily.
The wine matures for 12 months on fine lees in new and seasoned French oak. A small component of Cabernet Sauvignon or Mataro is typically included in the final blend. It is bottled unfined.
Deep red, Head Wines Old Vine Shiraz’s focus is the richness and sweetness of its ‘Old Vine’ fruit. Cellaring potential is 10 years.
