Levantine Hill Chardonnay is primarily sourced from the estate's east facing block of Mendoza clone Chardonnay, with small amounts of the P58 and Bernard 95 clones.
The fruit is handpicked, sorted and whole bunch pressed. Its juice settles overnight then is coarsely racked to barrel, where it ferments with a mix of wild and inoculated yeasts.
Maturation is in new and seasoned French oak barrels of various sizes from various cooperages. The wine is aged on full lees with minimal stirring.
Bright yellow, Levantine Hill Chardonnay is full bodied and richly flavoured with nutty, toasty characters underpinning a chalky texture. Cellaring potential is 10 years.
