Ribbon Vale Elsa
Wine
Moss Wood Ribbon Vale Elsa is made with Sauvignon Blanc handpicked from the Ribbon Vale Vineyard at Wilyabrup in Margaret River. Some vintages also include a portion of Semillon.
The winemaking is tailored towards giving the wine its signature complexity and texture. The fruit is destemmed and crushed, then its juice rests for two hours on skins.
The juice is pressed to a stainless steel tank for settling. After 24 hours, the clear juice is racked to a second tank where it is seeded with multiple yeast strains for fermentation.
At the halfway point, the fermenting juice is racked to French oak. Malolactic fermentation is also encouraged, with the barrels sometimes lined up out in the cool autumn sun to warm them enough to jump start the process.
The wine is then racked and blended to tank, adjusted for acidity and sulphured. The finished wine is returned to barrel to mature further before bottling.
Straw green, Moss Wood Ribbon Vale Elsa is a fuller bodied Sauvignon Blanc with round, generous fruit flavours, fresh acidity and firm tannins. Cellaring potential is 10 years.
