Head Wines Wilton Hill Shiraz draws from a small 1929 Shiraz block at Wilton Hill. The vineyard takes its name from its hilltop position above Wilton, an old gold mining town in Flaxman Valley.
Winemaker Alex Head does not grow his own grapes. Instead he works with a number of small growers carefully selecting parcels of fruit from elevated Eden Valley sites.
Wilton Hill Shiraz is produced only in vintages that deliver the required complexity and length of flavour.
The fruit is fermented as whole bunches in a small open fermenter. During two weeks fermentation with indigenous yeasts, the wine is foot trodden and hand plunged.
The wine is then basket pressed for maturation in new French oak barriques for 18 months. It matures for a further three years in bottle prior to release.
Deep red purple, Head Wines Wilton Hill Shiraz is full bodied with powerful dark fruit flavours. Made in very limited quantities. Cellaring potential is 15 years.
