Pressing Matters Cuvée C Pinot Noir draws from the winery's Coal River Valley vineyard. With 4,200 vines per hectare and yields kept low, the site produces fruit with intense flavours.
A mix of over 18 different clone and rootstock combinations result in fruit with subtle but noticeable differences. Each is handpicked, hand sorted and processed separately.
Following fermentation, the parcels are sent to French oak to mature for 9-10 months, with new oak influence kept to a minimum. Each barrel is individually tasted to assess its suitability for the final blend.
The exceptional parcels are reserved for the Cuvée C release. The wine is then aged for a further 3-4 years in bottle prior to release.
Deep red, Pressing Matters Cuvée C Pinot Noir has dense red and black fruit flavours with long lines of acidity and tannins. The finish is persistent. Cellaring potential is five years.
