Wine

Gaelic Cemetery Vineyard White Hut Riesling is sourced from the small locality of White Hut, situated at over 400 metres above sea level, just north of the Clare township.

The grapes, a mix of hand and machine harvested, are destemmed and pressed of their juice. The juice is chilled and partially clarified via cold settling, with some solids retained to add texture and complexity.

Fermentation takes place in temperature controlled stainless steel tanks with a pure yeast culture. After 25-30 days the wine is stabilized and filtered prior to bottling.

Pale straw green, Gaelic Cemetery Vineyard White Hut Riesling has zesty citrus flavours with long, chalky mineral acidity. Cellaring potential is 10 years.
