Single Vineyard Chardonnay

Evans & Tate Single Vineyard Chardonnay hails from the Bridgelands Vineyard in Karridale, just south of the Margaret River township. The fruit is handpicked.
After cooling overnight, the whole bunches are delicately pressed for their free run juice, which is transferred to barrel without clarification.
Following wild yeast fermentation, most of the barrels are topped up and bunged for maturation. Several remain unbunged and are allowed to undergo malolactic fermentation, imparting subtle complexity.
After almost a year in barrel with monthly stirring, the wine is blended to tank with yeast lees and aged for a further 10 months prior to bottling.
Pale straw, Evans & Tate Single Vineyard Chardonnay has powerful flavour and structure with refreshing natural acidity. Cellaring potential is five years.
