Marchand & Burch Villages Pinot Noir is sourced from the estate's Mount Barrow vineyard, located at the eastern, elevated end of the Mount Barker wine region.
The fruit is handpicked and cooled in vented crates. It is then sorted and destemmed into small open fermenters, with up to 20% left as whole bunches.
As it ferments, the juice receives gentle pneumatic plunging to achieve optimum flavour, colour and tannin. One puncheon from each fermenter is run off to complete fermentation in new oak barrels.
After up to seven days on skins, the remaining wine is pressed to new and seasoned French oak puncheons to age on lees for 6-9 months.
Ruby red, Marchand & Burch Villages Pinot Noir has ripe red fruit flavours, sweet spice, tingling acidity and smooth tannins. Cellaring potential is two years.
