Levantine Hill Optume Cabernet Sauvignon is founder Elias Jreissati and winemaker Paul Bridgeman's shared vision to create the optimum cool climate wine.
Unlike their other wines, the winery looks beyond the horizon of the winery’s own vineyards. They handpick fruit from selected plots along the Yarra Valley's 'Golden Mile' for Cabernet.
The grapes are hand sorted, destemmed, crushed and tipped directly into open fermenters. Natural yeasts perform one third of the ferment before the juice is inoculated with specific yeasts.
The vats are hand plunged once a day to gently extract colour and integrate the tannins. After 2-5 weeks on skins, the wine is pressed to new and seasoned French oak barriques.
The components are blended prior to bottling. There is a tiny inclusion of Merlot.
Deep purple, Levantine Hill Optume Cabernet Sauvignon has brooding dark fruit flavours, savoury complexity and silky texture with a regal tannin finish.
It’s a cool climate Cabernet reminiscent of the wines that forged the Yarra Valley's reputation. Cellaring potential is 15 years.
