Wyjup Collection Cabernet Sauvignon

Plantagenet Wyjup Collection Cabernet Sauvignon is made with select parcels of fruit from the Wyjup Vineyard, 40 kilometres south-west of the Mount Barker township.

The fruit is destemmed into open fermenters without being chilled, then inoculated with a cultured yeast strain. Throughout the ferment, the juice is hand plunged and pumped over several times a day to extract tannins.

After resting on skins for up to four weeks, the wine is pressed to tank and racked to French oak barrels to undergo malolactic fermentation and maturation.

Dark red, Plantagenet Wyjup Collection Cabernet Sauvignon has intense dark berry flavours, concentrated tannins and length. Cellaring potential is 10 years.
