The Hill Block Reserve Cabernet
Wine
Pikes The Hill Block Reserve Cabernet is grown on the rolling slopes of Polish Hill River. The vines run east to west so the canopy shelters the fruit from the harsh afternoon sun.
The wine is made with Cabernet Sauvignon, though in some vintages it contains small amounts of Cabernet Franc or Merlot. The grapes are picked in the cool of night.
For fermentation, the juice is inoculated with a pure yeast culture. Once pressed the wine matures in French oak barrels stored in temperature controlled cellars. It is gently fined and filtered prior to bottling.
The wine is made only in exceptional vintages, and only in limited quantities.
Dark cherry red, Pikes The Hill Block Reserve Cabernet has opulent blue and black berry flavours with bright acidity and fine tannins. Cellaring potential is 10 years.
