Terre à Terre Daosa Natural Réserve is a sparkling blend of Pinot Noir and Chardonnay grown on the winery's high altitude Piccadilly Valley vineyards.
The wine is made following the méthode traditionnelle the method used in the Champagne region of France.
Ripe Pinot Noir fruit is handpicked and whole bunch pressed, with only the best cut of juice taken to undergo cool fermentation in stainless steel. Malolactic fermentation follows.
This base wine is then blended with parcels of Reserve Chardonnay and Pinot Noir which have aged in seasoned oak barrels. The blend is then inoculated with sugar and yeast for secondary fermentation in bottle.
The resulting sparkling wine is bottle aged for 18 months before its lees are removed and the wine is prepared for release.
Pale straw, Terre à Terre Daosa Natural Réserve has subtle strawberry flavours with aged complexity and length. Cellaring potential is two years.
