Talijancich Pedro Ximénez Liqueur draws from an old Swan Valley vineyard planted in 1900, where the winery has been purchasing Pedro Ximénez fruit since the 1950s.
The grapes are harvested when they are totally raisined on the vine. To extract the juice, they are crushed and minced before basket pressing. Very high sugar levels mean the juice barely ferments before being fortified.
The wine then develops layers of flavour over many years, maturing in old oak casks. Each bottle is individually numbered for release.
Almost black with an olive hue, Talijancich Pedro Ximénez Liqueur is a sweet fortified wine. It is luscious, concentrated and incredibly complex with a consistency like treacle.
Having completed its ageing, it will not benefit from cellaring but it can be enjoyed many months after opening.
