Notus Grenache

Sons of Eden Notus Grenache is from old Barossa vines. As the fruit reaches ripeness, Notus, the Greek god of the southerly wind, ushers in cool breezes to mark autumn's arrival.
The grapes are handpicked and sorted to retain only the best bunches. Most are destemmed into small, closed, egg shaped fermenters. The rest, around one quarter, are added as whole bunches.
The fruit is cold soaked for a short time, then warmed naturally to begin fermentation. It is both hand and foot plunged daily to help regulate the temperature and extract colour, flavour and tannin.
After several weeks, the wine is pressed from the skins to large oak barrels where it matures for six months. It is racked, blended and naturally clarified prior to bottling.
Bright ruby, Sons of Eden Notus Grenache is a modern style of Barossa Grenache with vibrant red fruit flavours, savoury spice and length. Cellaring potential is 10 years.
