Scorpo Wines Estate Shiraz is grown on a small section of the estate vineyard at Merricks North where the slope and aspect form a suntrap perfect for ripening the fruit.

The winemaking is modelled on the style of Côte-Rôtie and Hermitage in France. The fruit is chilled, destemmed and cold soaked to build flavour and complexity in the juice. It is then open vat fermented with indigenous yeasts.

The wine remains on skins for 18-20 days with plunging as needed. Once pressed, it matures in a selection of tight grained French oak barrels for 18 months.

Deep red purple, Scorpo Wines Estate Shiraz has rich dark berry flavours, savoury characters and silky, persistent tannins. Cellaring potential is 10 years.
