High Eden The Red
Wine
Mountadam High Eden The Red is a blend of Cabernet Sauvignon and Merlot with a touch of Cabernet Franc, all grown in the Eden Valley's cool, dry, continental climate.
Individual parcels of fruit are fermented with the cap of grape skins kept submerged. The juice is racked and returned daily for around 14 days, then is allowed to sit with the skins submerged for a further six weeks.
After pressing, maturation takes place in new French oak barrels for 20-24 months. The individual parcels are then blended in preparation for bottling.
Inky crimson purple, Mountadam Vineyards The Red High Eden has supple dark fruit flavours with cedary oak and spice complexity. Cellaring potential is 12 years.
