Hay Shed Hill Chardonnay is sourced from old Gin Gin clone Chardonnay vines grown on the estate vineyard in Margaret River's Wilyabrup Valley.
Only the free run juice is taken for fermentation in French oak barrels, around one third new. The wine matures in the same barrels for 10 months. To highlight the purity of the fruit, there is no lees stirring or malolactic fermentation.
Pale straw, Hay Shed Hill Chardonnay's vibrant fruit flavours are complemented by a clean, crisp acidity. Cellaring potential is five years.
