Hanging Rock Winery Cuvée Macedon Late Disgorged is a blend of Pinot Noir and Chardonnay grown in the high altitude and cool climate of Victoria's Macedon Ranges.

The wine's base components are aged on lees from the moment primary fermentation is complete. They are stored in seasoned French oak barrels with residual lees from many previous vintages – crucial for developing the wine's hallmark complexity.

The wine comprises the current vintage (50%) and a blend of reserve wines from the previous 10 years (50%). After blending, the wine is bottled with a small addition of sugar and yeast.

Secondary fermentation occurs in the bottle, creating natural effervescence. The wine then ages on lees for 15 years before it is disgorged and prepared for release.

Deep yellow, Hanging Rock Winery Cuvée Macedon Late Disgorged has fresh fruit flavours, intense bready, leesy complexity and lingering acidity. It is ready to drink.
