Phillip Patrick Eden Valley Shiraz
Wine
Woods Crampton Phillip Patrick Eden Valley Shiraz, named after the father of winery co-founder Nicholas Crampton, is drawn from a vineyard on the road between Angaston and Moculta at the edge of the Eden Valley.
The fruit is chilled and cold soaked. Most is destemmed before being placed into fermenters with whole bunches – one third of the total – laid across the bottom.
After a slow, cool ferment with the cap of grape skins kept submerged, the wine is racked to low toast French oak barrels, 70% new. It matures for 20 months without racking or stirring, though the barrels are topped up every six weeks.
The wine is given only a coarse filtration and a dash of sulphur before bottling.
Vibrant purple, Woods Crampton Phillip Patrick Eden Valley Shiraz is brooding yet bright with powerful dark fruit flavours framed by long, fine tannins. Cellaring potential is 15 years.
