Elevation Cabernet Sauvignon

Whicher Ridge Elevation Cabernet Sauvignon is grown at Chapman Hill in Geographe. The vines, sited in gravelly loam soils and rocky ironstone terrain, are harvested in the cool of the early morning.
Most of the fruit is open fermented. It receives an alternating regime of hand plunging and rack and returns, where the juice is drained away then returned over the grape skins with plenty of aeration. A barrel fermented portion adds complexity.
At dryness the wine is basket pressed. It is then matured in a mix of new and seasoned French oak barrels for around two years.
Deep inky red, Whicher Ridge Elevation Cabernet Sauvignon has complex dark berry flavours, minty characters and finely textured grainy tannins. Cellaring potential is eight years.
