Elevage Sauvignon Blanc

Whicher Ridge Elevage Sauvignon Blanc is inspired by the Austrian barrel fermented style of Sauvignon Blanc, introduced to owners Cathy and Neil Howard during their trip to Austria in 2008.
This wine champions the process of élevage, or how the wine is 'raised' after the initial ferment in a mix of French oak and stainless steel.
After fermentation the wine spends extended time maturing on lees, usually 12 months. The lees are stirred fortnightly for the first three months then monthly thereafter, building creamy textures and flavour complexity.
Pale straw green, Whicher Ridge Elevage Sauvignon Blanc has bright pear and white stone fruit flavours with smooth nutty, toasty notes from the oak. Cellaring potential is five years.
