Crayères Vineyard Cabernet Sauvignon Shiraz

Terre à Terre Crayères Vineyard Cabernet Sauvignon Shiraz draws from the Crayères Vineyard at Wrattonbully, sited on terra rossa soils atop a series of natural limestone caves.
Each variety, as well as a tiny portion of Cabernet Franc, is hand harvested and transported to the winery in the Adelaide Hills. There it is crushed and destemmed.
The juice ferments in a mix of large potter fermenters and smaller open fermenters, where it also macerates on skins. Once pressed, each variety undergoes malolactic fermentation in tank.
First the wine matures in new and seasoned French oak barrels, then is sent to old oak vats to age further. It is lightly fined, blended and bottled without filtration.
Bright red, Terre à Terre Crayères Vineyard Cabernet Sauvignon Shiraz is a fruity wine with firm, velvety tannins and a savoury finish. Cellaring potential is 15 years.
