Single Site Pinot Noir

Rockcliffe Single Site Pinot Noir is sourced from a single vineyard at Denmark, close to the granite cliffs that dominate the area's coastline and inspire the winery's name.
The fruit is destemmed, crushed and cold soaked. The juice is warmed naturally to ferment with inoculated yeast. It is plunged twice a day and kept at 25°C to avoid over extracting tannins from the skins.
The wine is then transferred to new and seasoned French oak barrels for malolactic fermentation and nine months of maturation.
Deep crimson, Rockcliffe Single Site Pinot Noir has concentrated dark fruit flavours, savoury, earthy characters and a velvety texture. Cellaring potential is six years.
