Single Site Cabernet Sauvignon

Rockcliffe Single Site Cabernet Sauvignon is each year sourced from a single vineyard in Western Australia's Great Southern region. All the fruit is machine harvested.
The fruit is destemmed, crushed and chilled into small open fermenters for cold soaking. It warms over several days then is inoculated with yeast. The ferments, kept at 25°C, are pumped over with aeration twice daily.
After a long post ferment maceration, the wine transfers to French oak barrels for malolactic fermentation and 16 months of maturation. It is fined with egg whites prior to bottling.
Crimson purple, Rockcliffe Single Site Cabernet Sauvignon has juicy berry flavours, earthy notes and integrated fine tannins. Cellaring potential is eight years.
